I've been eating a lot of mango and sticky rice, and at some point I realized that the reason it was so yummy was because the coconut cream tasted so good with the mangoes. I also have a peach seedling in my garden which has coconut overtones.

There seems to be some sort of flavor complement going on in between coconuts and mangoes/peaches. Indeed, I decided to give it a go with a mango coconut smoothie, and the result is simply scrumptiously delicious!

1 qt trader Joes non-fat organic yoghurt
5 atulfo mangoes
1/2 cup shredded coconut
5 tsp coconut sugar or xylitol

Mix in a blender and serve. Better flavor at room temperature. If it's too cold, the coconut gets masked.
